Saturday of Fun!!!





On Saturday we had a very busy day!! We started the day out going to a few yard sales, and then we came home because Jason's cousins were staying with us and then we went to Kneaders for there French toast!! It was so good!! It was very busy, I think with all the graduation made it really busy. After that we went to Boondocks with the Petersons. Darik was back for the weekend so we tried to make the most of it. The kids miss him so much, and loved having him back for a few days. We had so much fun on the Go-karts. Lydia had lots of fun till she went with me, I guess i drive to fast! It was fun. It was our anniversary too on Saturday but we decided to do dinner on Monday night so we could spend time with Darik.

Jason's Graduation




















Today Jason had Graduation. It was a fun time, long and the kids had a hard time sitting still, but they made it. Jason I'm so proud of you. We had a lunch afterwards with our families. It was nice. I know that there are lots of pictures, but I couldn't help myself, they are all so cute!!

Corn dog muffins


I found this recipe on "Dinners on Me" but i didn't have a Jiff corn bread mix, so what I did instead was mixed a batch of cronbread, added hot dogs to it(5-6) and then added about 1 cup of cheese. It made 24 muffins and the kids loved them!! They ate 12 of them last night for dinner, while Jason and I had home made Wingears Salad, yummy!! It was way easy and very good. Jaosn had one and said that he liked them. So hope some else can find it usefull.

This week for dinner............

I always have a hard time figuring out what I'm going to make for dinner that day. So today I have planned what i'm going to have each day for dinners, so that way I know what i'm going to do, instead at 4 wondering what to make before the kids start having there melt downs. So here is the plan and the recipes, just incase anybody wants to make them.

Monday-Baked French toast
Tuesday- tangy turkey tostadas
Wednesday- Swiss steak slow cooker
Thursday- Pioneer Woman Chicken Spaghetti
Friday- lasagna from freezer
Saturday- out to dinner for our anniversary

Baked French Toast **single recipe**(adapted from original recipe located here)1/2 cup brown sugar1/3 cup butter or margarine2 Tablespoons corn syrup1/2 cup to 1 cup chopped nuts (walnuts or pecans are good)zest from one orange (about 2 tsp)2/3 cup orange juice1/3 cup milk3 Tablespoons granulated sugar1 tsp cinnamon1 tsp vanilla4 large eggs, or 5 medium eggsIn a small saucepan (or use microwave) melt butter. Remove from heat and stir in brown sugar and corn syrup. Spread sauce in bottom of a cookie sheet. Sprinkle with nuts, if desired. Lay 6 to 8 slices of bread on top of sugar sauce & nuts.In a large bowl, wisk eggs. Add orange zest, orange juice, milk, granulated sugar, cinnamon and vanilla. Wisk to combine.Using a small measuring cup or ladle, scoop the egg mixture over each slice of bread making sure to coat each evenly. Cover and refrigerate for an hour. Bake 350 degrees for 25-30 minutes, checking bread for doneness.

Tangy Turkey tostada (Very good!!) p.29 light and tasty june/july 2004
1 ¼ pound of ground turkey
½ cup chopped onions
1 cup chopped green peppers
2 garlic minced
¾ cups fresh mushrooms
1 can kidney beans- drained
1 cup salsa
1 can green chilies deiced 4 oz
1 T. chili powder
1 t. cumin
½ t salt
4 drops hot sauce
1 ½ cups reduced fat Mexican cheese
½ cup frozen corn
16 corn tostadas 5 inches
2 cups lettuce
1 cup tomatoes
¼ cup cilantro

Slow Cooker Swiss Steak
1/4 cup all-purpose flour
salt and pepper to taste
1 1/2 pounds round steak, cut into small pieces
3 tablespoons vegetable oil
3 stalks celery, chopped
1 onion, chopped
3 carrots, shredded
2 (14.5 ounce) cans diced tomatoes with juice
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar, or to taste
In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar. Cover, and cook 8 to 10 hours on Low, until the round steak is very tender

Pioneer Woman Chicken Spaghetti2 cups cooked chicken2 cans Cream of Mushroom soup2 cups grated sharp cheddar cheese1/4 cup finely diced green pepper1/2 cup finely diced onion
1-4 oz jar diced pimentos, drained3 cups dry spaghetti, broken into two inch pieces2 cups reserved chicken broth from pot1 teaspoon Lawry’s Seasoned Salt1/8 to 1/4 teaspoon Cayenne pepperSalt & Pepper to taste1 additional cup grated sharp cheddar cheese
Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar. Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil.)

So here is the plan and I will let you know how it goes.

Our Room

We got these shelves at Roberts, and then I primed them and painted them and then yesterday Jason put them up in our Room, they look so great! Our room is starting to come together!! It feels so nice a relaxing!! We are still working on putting up a few more things. but it starting to look alot better. It is hard to see what it really looks like, but i will take more pictures, when we get closer to finishing it all up.

Costco find.....



Today after the gym, we went to Costco and we were shopping and then we found these Sundried tomato and Basil Chicken Burgers with Mozzarella cheese. They are huge and really good. The burgers come with 8 in a package, but then they come packed in two burgers, which makes it really the perfect size, so then we can freeze the rest. They were really good!! Jason and I enjoyed them alot. Here is a picture from the box, and then a picture of my burger. It was very satisfying and really good. They are 5 points and oh, good. They taste different but really good. Enjoy.

Blonde


Yesterday I went and got my hair done, and I went back Blonde! I'm so happy with it. Here is a picture of it, but I think that it is hard to tell what it really looks like, but I tried!! I love it.

Luke



Here is Luke in his new haircut and his new outfit that I just love on him. We got it at the children's place, and oh it is too cute. I love my little Luke!!!

It's been a while

I know that it has been a while since I have updated our blog but nothing really has happened worth writing about. The girls have bad colds and I hope they are getting better. Last night was the first good night in a few days. I don't do very well with out a lot of sleep, so I'm glad they slept well. I guess we have spent most of Jason's days off from work furniture shopping. We are looking for couches and bunk beds for the girl’s room. It has been really hard to find what I want as far a bunk beds go because I want White hardwood, with a full on the bottom and a twin on top. That is way hard to find. I finally found what I wanted at a place called All The Great Rooms and they can order it in and it is a good price!! Yeah. I have only been able to find them online and they are way expensive, so I'm glad that we have found them. Also we found a bed for Jason and I that we really like as well, out shopping. I guess that is the bad thing about doing all this shopping is you find stuff you like. It would go great in our beach theme room, and we love it a lot. We also found some couches that Jason and I both like (that is really hard, because we like different things) but they are a lot of money so we are thinking about it. We also need to go back and make sure we liked them as much as we first thought. Jason has been working ALOT out in the garage making some shelves and just having fun with his new work bench that he got at Costco. It is very nice, and he loves it a lot. Jason got his workbench for part of his graduation present. So, that is all that is going on in the Peterson house for the past few weeks. That is for you LIZ hope you enjoy!!

After reading Liz's Blog and after talking to Jason about it, we are going to be changing our web address as well. We don't want to go private becasue then it is harder for people to find us.
